Harvest & Cellar

Hand harvest, as gentle as possible, and uncompromising selection. Only the finest fruit makes it into our cellar, having developed maximum expression through long hang times.

Our grapes arrive from the vineyard with vital yeasts in tow. The fruit is then gently pressed and allowed to ferment spontaneously in the cellar. After fermentation, we give our young wines extended lees maturation for greater stability, harmony, and balance. This also grants the wines time to develop their personality.

Our single-site wines mature for at least one year in traditional Stückfass barrels crafted from local oak. The extended time in barrel give the wines balance, harmony, and a compelling expression. They show their character with pride.


Our Réserve wines mature even longer, in small Barrique. Regular bâtonnage brings further complexity, depth, and distinction.
